Stuffed Turkey with Berries and Apples
Savory bread stuffing and a delicious fruit sauce make this recipe extra special.
INGREDIENTS
6 tbsp (90 mL) butter
6 white or brown bread slices, small diced
½ tsp (2 mL) sage
½ tsp (2 mL) thyme
2 small McIntosh apples
1 celery stalk, small diced
1 garlic clove, minced
1 small onion, small diced
1½ cups (375 mL) chicken broth
1½ lbs (675 g) turkey fillets, boned
2 cups (500 mL) apple cider
2 tbsp (30 mL) cornstarch
¼ cup (50 mL) cold water
1 cup (250 mL) frozen pearl onions, thawed and drained
¼ cup (50 mL) cranberries or Saskatoons
1 tbsp (15 mL) fresh parsley, chopped
METHOD
- Preheat oven to 350°F (175°C).
- Melt 2 tbsp (30 mL) butter. Place in an ovenproof casserole dish.
- Add bread, sage and thyme to casserole dish. Toss mixture together.
- Bake for 10 minutes
- Peel, core and finely chop one of the apples.
- In a medium skillet, heat 2 tbsp (30 mL) butter over medium heat.
- Sauté celery, garlic, chopped apples and onions for 5 minutes, until vegetables are soft.
- Stir in ½ cup (125 mL) chicken broth. Bring to a boil.
- Stir in bread mixture until combined. Remove stuffing from heat.
- Place turkey between 2 sheets of plastic wrap. Flatten with the flat edge of a meat mallet.
- Remove plastic wrap.
- Divide stuffing onto flattened turkey.
- Pin edges of turkey around stuffs wooden skewers.
- In a large skillet, heat remaining butter over medium heat.
- Sauté turkey until lightly browned all sides.
- Add cider and bring to a boil
- Cover and reduce heat to low. S for 15 minutes, until turkey in tend
- Transfer turkey to a serving platter and keep warm. Remove skewers
- In a small bowl, dissolve come in water.
- Peel, core and slice remaining apple
- Place remaining chicken broth ins Bring to a boil over medium heat
- Add cornstarch mixture to skillet, stirring sauce as it thickens.
- Stir in pearl onions, apples, and berries. Cook until fruit is heated through.
- Spoon sauce around turkey,
- Garnish with parsley and serve. 6 servings
